Baked Venison Summer SausageIt's not true smoked summer sausage, but this oven baked venison summer sausage will do in a pinch. Actually, it tastes pretty darned good. This basic recipe is for six pounds of ground venison.
Baked Summer Sausage
This recipe is not too bad at all. It's easy to make, and simplifies the whole summer sausage making process by being baked in the oven instead of slow smoked. Here's the ingredient list...

6 lbs ground deer meat

1/4 cup Morton Tender Quick

2 tablespoons mustard seed

2 teaspoons hickory salt

2 teaspoons onion powder

2 teaspoons black pepper

2 teaspoons garlic powder

2 teaspoons red pepper

2 teaspoons liquid smoke

2 c. water
Mix all ingredients together and refrigerate overnight in a covered container. Shape into 2 inch thick rolls and wrap in foil. Punch a few holes in the foil and bake the summer sausages at 350F for one hour, or until the internal temperature reaches 155F. Cool before cutting.
