Jerkey Brine

Simple Jerkey Brine, works for wild game or beef, this one is good for approx. 15 lbs. of lean meat;
4 cups cold water
2 cups soy sause
1 tea spoon garlic salt
2 table spoon Worchester Sause
1/2 tea spoon liquid smoke
Slice lean meat at 3/8" , marinade 1 to 3 days , lay flat on dehydrator trays and dry for 8 to 12 hours , turning trays about 4 hours . Store in Ziploc freezer bags in freezer for as long as it lasts . Not long arround this house.
For Teriyaki : add 2 cups teriyaki sause , 1/4 cup pineapple juice ( optional)
For Peppered : add 1/4 cup hot sause , and cut back water to 2 cups , cover lightly with fresh ground pepper !
To heat it up , spritz with the hot sause befor drying .
I have been selling all I can make of these recipes, Teriyaki being the #1 favorite by far . Steve
