One or more deer hearts

Flour
-
Milk

Salt and pepper

Cracker crumbs

Bacon fat
Cut the heart into quarter-inch thick slices and season with salt and pepper. Roll the slices in flour, dip in the milk, then dip in cracker crumbs. Fry in hot bacon fat until lightly browned on each side.
Earl, thanks for this recipe. I will give it a try next year when I get my deer. I'll have my buddies save theirs, too, and we'll have a fried deer heart party. I bet it would taste good washed down with a couple of cold ones, wouldn't it?
