Fried Deer Heart

This recipe for fried deer heart may not be for everyone. But for those that believe in the old saying "Waste not, want not", it's a good way to make use of a part of the deer that most throw away.

This recipe was sent to me by Earl of Grand Island, Nebraska. The ingredients include...

  • One or more deer hearts
  • Flour
  • Milk
  • Salt and pepper
  • Cracker crumbs
  • Bacon fat

Cut the heart into quarter-inch thick slices and season with salt and pepper. Roll the slices in flour, dip in the milk, then dip in cracker crumbs. Fry in hot bacon fat until lightly browned on each side.

Earl, thanks for this recipe. I will give it a try next year when I get my deer. I'll have my buddies save theirs, too, and we'll have a fried deer heart party. I bet it would taste good washed down with a couple of cold ones, wouldn't it?
