ROASTED VENISON SHOULDER
This is a great way to utilize the shoulder with minimum effort....
1 whole deer shoulder trimmed
12-20 whole cloves garlic
fresh cracked pepper
Trim fat and silver skin as much as possible cut slits all over shoulder, insert garlic cloves in meaty areas all over shoulder. sat and pepper genorously and rub in cover in strips of bacon and pin.
Roast in 400f
oven for 30 min or until bacon starts to brown, cover in foil and reduce heat to 325f and cook for 2-2 1/2 hrs till tender. The meat will just pull off the bone.
Serve with your favorite veggies and hot crusty bread.
I have made this many times and it's always yummy.
