Bacon Stuffed Backstrap
1 roast from the big end of the backstrap
1 lb bacon
1 can crushed pineapple
salt , pepper , and garlic salt to taste
red pepper flakes(optional)
Butterfly backstrap, you want to do it in 1/3`s so you will have to slice 2 times. If needed, pound with smooth side of meat mallet to make it all the same thickness. Season with salt pepper and garlic salt. Lay bacon over meat in a single layer then cover with pineapple. Fold back into origal shape and grill over a low fire till med well. I prefer to use a smoker. Let rest 10 mins. before slicing
