Apple Juice Ham

by Lyle Shelnut
(little rock, ar)

Take a whole deer ham and separate the muscles and stuff with a stick butter, onion, and bell peppers. I use garlic powder and black pepper to season.

Drape bacon slices covering the top of the ham. Place the ham in an aluminum baking pan. Fill the pan with apple juice (about half way up the ham). The ham can be cooked in the oven, on the smoker, charcoal or gas grill.

Pre-heat oven to 200. Place pan on middle rack and cook 4 hours. Add apple juice as it cooks out. Remove pan from oven. Place potatoes and carrots around the ham. Cover the pan with aluminum foil and place back in oven. Cook for 45 minutes at 400 degrees.

Place pan away from the fire on a gas grill or charcoal grill. Cook for 3-4 hours adding apple juice as it cooks out. Add potatoes and carrots around the ham. Cover the pan with aluminum foil and place over the fire. Cook for about 45 or until veggies are done.

Smokers are a little different. Smoke for about 5 hours adding apple juice as it cooks out. Add potatoes and carrots around the ham. Smoke until the veggies are done.
